Do you have BBQ left over? Do you like nachos? If yes, then this is for you! If you have BBQ left over from the weekend, or just a random Tuesday, this dish is ready in mere minutes. It’s also perfect for any game day!
- 1 tostada
- 4-5 oz of pulled pork BBQ (Google Crockpot BBQ for good choices here!)
- 1 cup of coleslaw lightly dressed with coleslaw dressing
- ½ cup – ¾ cup of shredded cheddar/jack cheese
- BBQ sauce
Once you have all the ingredients gathered, it is simply a matter of layering. Turn the oven to broil. Place tostada on an oven safe pate or pan. Lightly dress the coleslaw with the dressing. Start with a tablespoon at a time until it is coated, but not soupy. Place slaw on top of the tostada and top with half of the cheese. Heat the BBQ in a sauce pan on the stove or in the microwave until warm. Add warm BBQ to the slaw. Top with remaining cheese and drizzle BBQ sauce over it all. Place under the broiler for 1 minute or until cheese is melted and just brown. Enjoy your giant BBQ nacho!
