EDGE Gingerbread Waffles and Pancakes

When the new flavor of Salted Carmel EDGE Whey Protein was released, this was one of the items I was excited to create.  Perfect for a weekend breakfast or cut into quarters would be a great snack with some nut butter.  Any way you choose to enjoy them, gingerbread waffles or pancakes are going to be a treat!

  • 1 cup of complete pancake/waffle mix
  • 1 scoop of EDGE Salted Caramel Whey Protein
  • 1 tsp ground ginger
  • ½ tsp cinnamon
  • ¼ tsp allspice
  • 1 T molasses
  • ¾ cup + 1 T of water

Serves 2

1 waffle or 4 pancakes- 300 calories, 52g carbohydrates, 18g Protein, 3g Fat

For Waffles:  Heat waffle iron to med/high heat. Combine all dry ingredients and stir to mix well.  Add water, stirring until batter is smooth then add molasses.  Let batter sit for 2-3 minutes.  Spray cooking surface with non-stick spray. Add batter to waffle iron sections carefully about ¼ of a cup at a time. Close waffle iron and cook until the indicator light alerts you that the waffle is done.  Carefully remove it from the iron and use the remaining batter to repeat the process.

 

For Pancakes: Heat a griddle to medium/high heat. Prepare batter as above. Spray griddle with non-stick spray or grease with a pat of butter.  Spoon ¼ cup portions of batter onto griddle.  Cook 1-2 minutes and flip, cooking 1-2 more minutes on the other side. Repeat until batter is used.

Maple Mascarpone Cream

  • ¼ Mascarpone Cream Cheese
  • 1 T Maple Syrup
  • Milk of Choice

Stir mascarpone cream cheese until smooth and add the maple syrup and blend well.  You can use the milk of your choice to thin to whatever consistency you desire.
